As touched on above, these oils experience rancidification – a process that yields a rank smell and unpleasant taste. As a cutting board touches your food, substances that can turn rancid should be avoided. Yes, any mineral oil sold in a grocery or pharmacy will work. Mineral oil is mineral oil. Wet the cutting board one more time and hand sand with 220 again. Now when you wet the board after use it will still feel smooth to the touch. Starting with 80-grit sandpaper, sand the cutting board along the grain to remove deep cuts and dents. Wipe with a damp cloth, and let dry completely before repeating with 120-grit and finally 220-grit sandpaper. A drying oil such as boiled linseed oil or a blend of oil and varnish (“Danish Oil”) can be made to look shinier and nicer with several coats. But be aware that if you make the cutting boards look too nice people won’t buy them because they won’t want to cut on them and mess them up…I know this from experience.
